Amanda's newest creation is this beautiful cookbook. It arrived on my doorstep Friday and I was #literally dancing with excitement! I have been wanting recipes like these since I started the paleo diet 5 years ago. With my excitement the #NerdyHubby and I had picked all the recipes to cook Saturday! Surprisingly I only needed a few items from the store, most of the ingredients needed are staples in the pantry. #HappyDance I mean who doesn't love recipes that don't require all sorts of odd/unique ingredients you have to go scavenging for? I adore simple and easy cooking, nothing too complicated.
What You Need to Know About This Book?
Amanda collaborated with her Puerto Rican mother-in-law Milagros Torres to write this cookbook. Amanda wanted to keep the recipes as authentic Latin American comfort foods while still keeping them gluten-free, dairy-free, and refined sugar-free. There are 80 traditional recipes while representing 8 different countries, including: Puerto Rico, Cuba, Venezuela, Colombia, Peru, Argentina, El Salvador, Dominican Republic, and Brazil. From the 80 recipes, only 8 are not AIP friendly; that's impressive!
Some of the recipes are Arepas, Empanadas al Horno (Baked Meat Turnovers), Ropa Vieja (Shredded Beef in Tomato Sauce), Pollo a la Brasa (Marinated Roasted Chicken), Yuca Fries, and desserts like Flan de Coco, Tres Leches Cake and Hojaldre (Puerto Rican Spice Cake). All are as flavorful as they are healthy!

I loved this cookbook! ⭐️ ⭐️ ⭐️ ⭐️ ⭐️ My family loved the recipes I was able to simply recreate! The book is gorgeous in it's self. This book is laid out easy to maneuver and understand. It's separated into Platos de la Familia (Family Dinners), Comida Fiesta! (Party Food!), Rapido y Facil (Quick and Easy), Accompanantes (Sides), Un Poco Dulce (A Little Sweet), and Lo Essentials (The Essentials). The Family Dinners are great for batch cooking.
I created 4 separate recipes; Curtido (Spicy Cabbage Slaw), Pupusas Con Chicharron O "Queso" (Stuffed "Corn" Tortillas), Platanos Maduros (Fries Ripe Plantains), and for dessert Platanos Calados (Stewed Spiced Ripe Plantains). See pictures below. #notaprofessional I didn't get a picture of the Platanos Calados (Stewed Spiced Ripe Plantains) because they were devoured! The Pupusas Con Chicharron O "Queso" (Stuffed "Corn" Tortillas) tasted AH-Mazing by them selves BUT the Curtido (Spicy Cabbage Slaw) added a whole new dimension of flavor. The following morning we added the Curtido to our fried eggs, DO IT! #WorthIt #YouWontRegretIt #PinkyPromise
